If I record for instance from a radio programme, Audacity also records from the room and from the loudspeakers, so if I turn down the volume (the loudspeakers) it stops recording.
How do I make it record directly from the source and not via the loudspeakers?

You posted in the Mac section… 
Try WASAPI loopback.
Be sure to select the loopback device where the sound is coming out (usually your regular soundcard) and you may have to start playback before hitting record.
What does loopback device mene? And how do I choose my soundcard?
