I’m trying to use a Zoom AMS-44 to record with 4 separate XLR mics. According to the Zoom user manual, I should be getting 4 independent outs. It doesn’t seem to matter what settings I try and use, I always get all 4 mics recording on the same track. I need to have 4 independent tracks for editing/balancing purposes. I have a Focusrite 2 that’s never given me any issues at all with independent tracking, but for some reason this Zoom is kicking my tail!! I’ve already installed all of the latest drivers/updated firmware.
Audacity is “not great” at multi-channel recording and a lot of people have trouble. It may work better on a Mac but I’m not sure.

Your best bet is probably to upgrade to a full-DAW application.
A DAW also has more features for mixing. The downside is a bigger learning curve, and most are not free.
