Any time your computer is involved in a multimedia activity (which includes audio), the monitors will not go blank. This is to prevent something like watching a DVD from turning off the screen before it is done.
Audacity recording or playing, does not need the screen all the time. Is there not an option that will allow the user to choose?
There is no Audacity setting that I know of that controls this behavior. It is done by the operating system.
You may find something in your operating system settings to do that, but I would expect it to be complicated to find and test because you would have to wait for a time-out to see if it worked every time you change something.
You could set up a keyboard combination to invoke the screen saver when you plan to leave Audacity running unattended.
