I have installed a Snowball ICE Microphone to my macbook pro. Using Audacity 2.1.1 it only allows me MONO recording, how do I get Stereo?

The Snowball ICE Microphone is a mono microphone.
If you record with “number of channels” set to “1 (mono)” in the Device Toolbar, then the recording will play out of both left and right speakers.
