If I don’t want to use the latest version 3.6.2, how do I go back to an earlier version that I WAS using?

Which was what? If you keep up with current issue that might have been 3.6.1. It’s good to keep on top of update history. I know it’s the fashion to just blindly do all possible updates, but people have been getting burned with that idea.
When you back up, you might Tools > Reset Configuration. That should keep most of the troublesome changes from sticking to your machine.
If Audacity still acts funny after you back up, there are more serious resets you can do.

Koz, I was comfortable with Version 3.4.2 … and I’d like to get back to that
Click through to Fosshub above, find the version and machine type you like and install it. After you settle, Tools > Reset Configuration to minimize contamination between the versions.
This is a thing on a more thorough uninstall.
Apparently, the forum has published their own listing of older versions.
