I’ve not tried 3.7.5 on macOS, but traditionally it has been the “C” key.
The C key seems to be it by default (on Windows) for the Play Cut Preview:

If you enable “Show extra menus” in Preferences: Interface like so:
then you will find the Play Cut Preview option and others there:
