So…Now I’m using a Focusrite Scarlett Solo, BIAS FX 2 emulation software. Audacity only records the dry guitar and only on the right channel.

I believe the mic is the left channel and the guitar is the right. You can record in mono (which will play through both speakers) but if you don’t have any sound into the mic input it will probably max-out at half volume (-6dB), but the levels can be boosted after recording.
Or you can make a mono track after or copy the guitar into both stereo channels after recording, etc.
Audacity doesn’t apply effects in real-time during recording.
I’m not familiar with BIAS FX 2 but their website does not list Audacity as a supported host (DAW) so I don’t know if it will work as a plug-in effect after recording or not.
