Mic only records in Stereo on Left side. When set recording channel to “1 (mono)” unable to record any audio.
Been at this for 4 hours.

From what I can glean from those articles (“It is not possible to record an input without Audacity also recording the inputs that come before this”), and noting that the Scarlet Solo has the XLR jack connect to “Input 2”, it seems you’re stuck recording in stereo.
After recording, from the Track drop-down menu (Audio Track Dropdown Menu - Audacity Manual) select “Split Stereo to Mono” then delete the empty channel.
