Connect the mic before launching Audacity.
Select the mic as the recording device in Device Toolbar. It will probably be called “USB Audio CODEC (hw:1,0)” or similar.
This only works if only Audacity is using the mic. If you need other apps to be using the mic simultaneously, install pavucontrol (PulseAudio Volume Control), make the mic the recording device in PulseAudio Volume Control, then choose the “pulse” or “default” recording device in Audacity.
Your mic is 44100 Hz, so set that rate as project rate bottom left of Audacity.
