I want to make many individual midi files from one file containing many midi tracks.
I don’t think Audacity can do that. It’s not a MIDI application but it has some limited MIDI functionality.
You can trim down an imported MIDI track by deleting parts of it, and then export the edited track.
You can also Undo the edits (“Ctrl + Z”) and edit it differently, and then export again with a new name.
Be aware that MIDI tracks often set up instruments and other parameters at the start of the track. Removing the start of a MIDI track may cause it to sound wrong.

You could try Cakewalk from Bandlab. (It’s free).
I’ve not used Cakewalk for many years, but in the past I used it extensively for working with MIDI and it was very good. It was also a pretty powerful DAW for audio work.
