I believe that’s a driver feature, not something built-into Windows. It does seem to have mostly disappeared.
But [u]WASAPI loopback[/u] is built-into Windows and it works similarly.
There is a quirk with WASAPI loopback,… It won’t record if there is no digital audio stream (if the audio stream is paused or stopped). It can record a silent stream but it won’t record “nothing”.
Sometimes stereo-mix can be available but hidden …

The WASAPI method is slightly better audio quality than via stereo-mix.

I had this issue with win 11 too. (No Stereo Source) I installed the R282 release from Realtek for Win 10 and it seems to be working fine. Once installed you have to go to Control Panel>Sounds Recording tab and set stereo to default.
