Curious about version updates

I’m using 3.6.1

I hear that 3.7 presents very different visually. If I update to 3.7, and I don’t like it…is it easy to revert back to 3.6?

You should be able to just install the older version over the top of the current version, then reset Preferences. All Audacity 3.x releases are available here: Releases · audacity/audacity · GitHub

if you prefer the old look, you also can just switch to the classic theme in 3.6
