Every time I try to record over a previous track it jumps to the end of the former track rather than letting me record a new track over it. For example, I have one base track of an instrumental and I try to record again over it with the vocals but instead it just jumps to the end of the instrumental track. Any advice on how to fix this? I didn’t see this issue online or in the manual and I’m sure its a simple fix but I’m lost.

Your specific problem: Audacity > Edit > Preferences > Recording > [X] Record on a New Track.
Audacity > Edit > Preferences > Recording > [_] Software Playthorugh (off).
Audacity > Edit > Preferences > Recording > [X] Overdub.

It doesn’t mix on one line. It just piles up all your tracks one above the other and plays all of them. You can tune each one as you wish—Mute and Solo as needed. Audacity will mix everything down to one (stereo??) track when you export.
