Why do you always only get the old junk downloaded with this command?

sudo apt update
sudo apt install audacity

Why do you have to download an extra image? Are you not able to upload a new version to your server or do you no longer need that?

apt install audacity installs Audacity from the sources set in your package manager (apt). Typically this is the distribution’s software repository, though additional repositories may be added (such as PPAs).

The official repositories are updated periodically, but frequently lag behind the upstream developer version. Before an update is added to a distro, it has to be packaged and tested by the package maintainers. In some cases it may also have additional bug fixes. For example, Debian based distros such as Ubuntu and Mint get many of their packages from the Debian repository, where Debian package maintainers build and test deb packages for the Debian OS.

The AppImage versions of Audacity are automatically generated by the Audacity team’s build scripts. These are usually up to date with the latest release version and are available from Audacity’s GitHub:

Although the repository versions may be a little older than the latest release, they are often more stable.
