Many do now. They didn’t used to. It used to be if you had a USB microphone it was USB from the mic to the computer, full stop. Many now offer “zero latency monitoring” and internal mixing. You still have to look for it.
Also, USB mixers may now feature two new controls: the ability to monitor the computer and the ability to include the computer sound in the show mix. That last one people set wrong and produce “overdubbing pileups,” where instead of recording individual voices and instruments in their own tracks in overdubbing, each new voice accidentally includes all that came before.
My analog mixer won’t do those tricks, but I can get the zero latency monitoring effect with the Behringer USB converter featured in this illustration.

I don’t recommend Apple earbuds for production. They were handy for the photo.
