After I have recorded how do I see everything so that I can
...choose where to listen from wherever in the recording? Right now I can only see a segment of few seconds, so that I can start listening from only that portion.

The Zoom tools. Command-F zooms out to the Full show. If you drag-select a part of the show, Command-E zooms into that. Command-3 zooms out a little bit. I live in those three tools.
