Creating a backtrack
Does this product allow me to edit out a certain instrument from the track and then save and copy to a cd so I can play along with music I already have?

No. The sole exception might be Effect > Vocal Remover which deletes anything in the exact left-right center of a good quality stereo show. The original stereo show turns mono when you get done. Since the singer is usually in the middle, the singer gets deleted. Many times drums and bass go, too, since they're in the middle.
