MP3 is a "lossy" format. When audio is encoded as MP3 there is a small but non-recoverable loss of sound quality as some of the audio data is discarded during the encoding. The losses can be minimised by encoding with a high bit-rate, but there will always be some loss of sound quality. See here for MP3 export options: http://manual.audacityteam.org/man/MP3_Export_Options

To export without losing sound quality, export in a "lossless" format such as WAV, AIFF or FLAC.
