I am using two technics turntables, a rane ttm56 mixer, serato scratch live, and an Apple PowerBook G4 15 inch
When I go to record things in audacity it records all the sound around me, and the recording sounds like crap. I have a monster cable that is running from my AUX outs on the back of my mixer into the jack next to the headphone jack on my computer. It seems like it won't record through that... A couple of times it has however... What am I doing wrong???

I do that all the time. What you're actually recording is the little microphone in the top of your PowerBook.
Open the Apple Preferences and tell it to switch to the 'Line In' instead of the built-in microphone. It's the preference with the little speaker icon.
