Hi,
Since I'm new, and also am not acquainted with HOW you did your recording; or with what hardware I'll just mention this:
If you've already recorded and tracks are in mono; you can use the effect: MATRIX: Mono to Stereo might solve your problem. Give it a shot, and let me know how it works for you.
Now regarding why the recording is not initially in stereo when you record - I haven't a clue.

When delivered OOTB Audacity is set by default to record in Mono.

To set it to stereo go to Edit > Preferences > Audio I/O and set the Channels to 2 (Stereo)
