Hi - I'm a new user and have quickly recorded and saved 25 projects. While there were only 10 or so I could open them by simply clicking "recent files" But recent files only shows the last 9 projects. when I go to file - open, I get a page where the project is in many smaller files and I cant seem to open the entire project. also, now it seems my projects are only opening as small bits of the original work and I'm afraid I've messed things up quite a bit..........
Could someone give me a tip as to how to restore and open the projects as they once were?

As long as you haven't gone around deleting or moving files, your projects are fine. You're just opening the wrong file.
An Audacity Project consists of two elements, the PROJECT_NAME.aup file and the PROJECT_NAME_data folder (which contains a whole bunch of .au files).
It looks like you're trying to open some of the data files in the _data folder. Back out of that folder and look for the PROJECT_NAME.aup file. That's the file you want to open.
You shouldn't be opening poking around in the _data folder (as long as you don't delete any files in there you won't hurt anything, but there's also nothing useful you can gain by poking around in there).

Don't delete any original capture clips. Audacity 1.2.x might still be standing on them. Just a thought.

And as Koz normally reminds people .... when you have finished your projects, don't keep them stored as projects - rather, export them as WAV files (more transportable and not prone to dailure by file movements).
