I can't seem to install Audacity from CD. It'll only operate while the disc's in the Mac. What am I doing wrong?

Not copying the audacity installation to your hard drive. You need to Option-Drag the whole of the contents of the .dmg file from where they are to your applications folder (or wherever else you like to put it), and then you will actually have copied the application, not just created a link to it (the default action when you drag and drop).
