im sure there is an easy fix for this, but i cant seem to find it.
when recording myself playing my guitar and singing, i always used to do one track guitar, one track vocals.
but something seems to have changed and now i do one track of guitar, and when i try and record vocals, it records the second track but i cant hear the guitar to sing along to
this is weird,

Not at all. This is a "Hidden Aural Teachings" kind of problem.
Simul-Play is handled by Hardware and Software Playthrough settings in Audacity Preferences > Audio I/O (Near the bottom).
I can't find any Wiki information posted about this. I mean other than that thing in Greek that I can't read, but if you want to give it a shot:

Many Audacity system level settings only "stick" after you restart the program.
