I am ready to start recording from cassette player line out to USB port in computer but the only option in the device drop down is built in microphone. Can anyone offer help or suggestions.

There's another piece of this. Those two don't plug into each other.line out to USB port in
Could this be as simple as plugging the tape machine in first and then start or restart Audacity? Audacity should be last.

Have a look at this page on the wiki.
Is this one of those $40 cassette-to-USB devices? If it shows up as "PnP USB Audio Device" in System Sound Preferences you may have trouble getting it to work reliably.
