Audacity 2.0.6 on Windows XP

I am recording piano and voice with separate mics, using a Mackie mixer.
I am panning the piano to the right; vocal to the left, so that I can easily adjust volume of the mix. There are probably more sophisticated ways of doing this, maybe with normalize?

My question is regarding how to replace small segments of either of the tracks.
I have used the overdub feature to add the vocal to the piano track, but also need the ability to edit the vocal track so that I could, for example, replace/re-record selection sections.
So, my questions:
1) Can I clear a section of a single track without affecting other tracks, or
2) Can I re-record a selected section of a pre-existing track?, or
3) Is there an easier way to do this?

I don't know that you can smash record into or over an existing track, but Audacity 2.1.0/2.1.1 will let you start recording a new track anywhere you wish. So you could start an overdub session in the middle of the song and then manage the new separate rack in post production editing.

Left to its own devices, Audacity will try to play everything at once, but you can use the Envelope tool to switch back and forth between different tracks as needed.

You can mute one track in sections with Control-L (silence) You can move any individual track sooner and later in time with the Time Shift Tool.

Overdubbing always produces new individual tracks. Track 2, add the violins. Track 3, add the trumpets.

If yours is automatically producing mixes, then you have it adjusted wrong.
