Editing a pre-recorded track

Audacity 2.0.6 on Windows XP
I am recording piano and voice with separate mics, using a Mackie mixer.
I am panning the piano to the right; vocal to the left, so that I can easily adjust volume of the mix. There are probably more sophisticated ways of doing this, maybe with normalize?
My question is regarding how to replace small segments of either of the tracks.
I have used the overdub feature to add the vocal to the piano track, but also need the ability to edit the vocal track so that I could, for example, replace/re-record selection sections.
So, my questions:
1) Can I clear a section of a single track without affecting other tracks, or
2) Can I re-record a selected section of a pre-existing track?, or
3) Is there an easier way to do this?
