I can not seem to listen to a project and adjust the EQ at the same time. Is that even possible? If so how?

Thank you all and have a great day. :)

Unfortunately Audacity cannot do that. However, one of the developers is currently working on that, so hopefully it will be possible in a future version.
For now, the closest that you can get to that is to adjust the settings, then press the "Preview" button, then readjust the settings as necessary and preview again. We are all aware that this is a bit awkward, which is why we are all excited by the prospect of this limitation finally being overcome. (It won't be in the next version of Audacity, but hopefully it may be available in the version after that.
