Mouse speed very slow in selecting recorded audio and recording is jumpy on the screen - any idea why?

Same mouse too Steve for both machines.
What I just tried on the affected machine is that I shut down/switched off the anti-virus protection.
It's the same on both machines.
It works fine on the good machine.
Having shut it down, things are/were so much better.
I think that because it's always running in the background (services and program updates); then this could be causing issues.
Do I stop the antivirus for the time of recording and then switch it back on when I'm done?
Or is there another workaround for the above?

That's the anti-virus that you are shutting down?

I can project what's happening during recording. The Anti Virus is carefully inspecting every little thing that arrives.
Can you compare the settings between the two anti-virus programs.

So can I disable the antivirus or close it down during recording or not?

Rather than closing it down completely (with the risk of forgetting to re-enable it), better to white-list ".AU" files (if your antivirus allows you to do that).
When recording, Audacity writes the audio data as AU files. If your antivirus is scanning every data file as it is written, that can have a huge impact on performance.

I've done that.
Added the Audacity folder to the exclusions folder.
On another note, I've completely taken the Internet out of the equation for recording what I want to record from there.
It's a radio show and it also broadcasts on DAB (as well as the Internet.)
I've plugged a DAB radio into the PC and it's recording fine (without any interference) from other, external sources.
As we know the Internet is prone to dropouts and it also stops working at times.
What works for one machine (PC) might not be the same for another PC.
It's all trial and error.
Will monitor this over this weekend to see how it goes.

I have a wireless mouse that sometimes worked and sometimes didn't - it would hesitate. It was connected through the Logitech USB receiver and I noticed it acted up when my TV (in the same room) was streaming. So I switched the connection to Bluetooth and that cleared up the mouse problem.
