I would like to record conversations using my headset. Ive tried multiple ideas with no joy.
I know you;re going to ask what I tried, but let's start over and see if I missed a step

The current version of Audacity is 2.3.0 and is available via the Audacity website: https://www.audacityteam.org/download/windows/
(Audacity 2.3.1 is due to be released in February).
We don't generally recommend recording with bluetooth devices as they are prone to connection problems, which can cause Audacity to stop recording, or in the worst case, freeze up. Your mileage may vary.
Check in the Windows Sound Control Panel to see if the device is listed as a recording device, and check that the green meter responds to your voice. If the device doesn't show up, or you don't see a response to your voice, then it will not work in Audacity.
