Windows 10 Pro (build 1809)
Audacity version 2.3.0
Windows will not recognize the .au filetype as Audacity (It says it is Winamp).
I does recognize the >.aup filetype as audacity. Can I fix this? How?

You should not access Audacity's ".au" files directly. They are data "block files" and are integral to the Audacity "Project" structure.
To open an Audacity project, open the ".AUP" file.
