The educational institute for which I work, has Audacity.

I would like to provide video demonstrations of various skill sets to students via the Course Management System. In order to do so, I must convert our DVD recordings to ASF files.

Can Audacity be used for this purpose?

No, Audacity is for audio editing and processing.
