Changing export directory

How can I change the directory audacity exports to, when exporting to save a recording

in wave or in the mp3 format.

We can't tell you because you did not post in the Windows, Mac or Linux board and so we don't know what operating system you have. We also don't know what version of Audacity you have.

Audacity uses more or less the same file save dialogue that is standard for your operating system. So when you find out how to change the save location in any such dialogue, you also know how to do it in Audacity. You could try looking at the words or icons in the export dialogue which are there to help you.
