Raising pitch (without changing tempo) is an imperfect process - Audacity has to chop the recording into lots of little pieces, speed up the individual bits, pad them out, and splice them all back together again. This inevitably causes changes to the sound. Changing the pitch just a little (one or two semi-tones) the loss of sound quality should be quite low, but changing the pitch by a lot will cause bigger distortions.
