If you want to record in stereo, then that should be set to "2 Channel".
It's not unusual for the left and right channels to be at slightly different levels from a turntable, but if they are a long way out then there may be something wrong.

Are you sure that they are actually stereo and not just 2 identical (mono) channels?

Two ways of doing it:

1) If you record something that has a distinctly stereo sound (the left and right sound distinctly different), then you can just listen to the recording to see if the left and right channels still sound distinctly different.

2) You can check if the two tracks are identical (mono) by applying the "Vocal Remover" effect. If the two channels were identical then the result will be silence.

Yes, Audacity is recording as stereo - that is, the sound that it is receiving is being recorded to two channels (left and right), but if Audacity is receiving mono sound, then both the left and right channels will be identical.

Possibly a good example of what I mean is CDs. CDs are always recorded as stereo tracks, but let's say that you have a CD of a 1920's recording. Back in the 1920s stereo had not been invented - all recordings were mono. If a mono 1920s recording is re-released on CD, then although the CD format is stereo (like your pictured stereo track) the actual sound will still be mono (both left and right channels will be identical). The tests that I mentioned are to test if the actual sound is mono or stereo.

Apart from a couple of clicks, that looks like silence.
