Is it possible to hear my guitar with effects before going into record mode so I can hear what it sounds like?

Not via Audacity alone. The effects in Audacity are applied after recording, (aka post-production).
A VST host can apply VST effects in real-time, (i.e. they are applied as you play), which you could then record via Audacity.
