Thanks for the continuing help.
@bgravato: What USB Device would you suggest? I really only need stereo input, but I've noticed those are hard to come by. Obviously it would also need to be compatible with linux and audacity.

If you only need one stereo line-level input you have the inexpensive (and often recommended here on the forums) behringer uca-202. I don't have one but I believe it works fine in Linux, Steve can confirm it.
If you need mic input and preamp with phantom power I recommend the ART USB Dual Pre. Works out of the box in linux and with audacity. I've written a review here:

Regarding internal soundcards... I have an Asus Xonar Essence STX, it works well in linux, some features are not available on linux, but more have been added at each new alsa release. I use it mainly for listening to music on headphones (the headphone output is really good and can drive high impedance headphones). It has a shared line-in/mic-in (software selectable). I rarely used it. I did a brief test on the line-in and it seemed to be pretty much noise free. I haven't tested the mic input. I highly recommend it if you like to listen to music on high-end headphones from the computer. Otherwise there might be cheaper solutions with less features that will suit your needs better.

Yes the UCA 202 works well on Linux - I use it to connect a small mixing desk to my laptop, and the output to an amplifier.
