Hi, I'm quite new to Linux and I've installed UbuntuStudio which provides Audacity.
I've tried to listen to the music through my stereo system , connecting the notebook (with UbuntuStudio/Audacity) to a DAC CEC DA53 with a USB cable, but the music still comes out of the notebook speakers.
Any suggestions???

You need to set the usb device as the playback device.
To do this in Audacity go to Preferences -> Devices -> Playback and select USB "something" (name will vary depending on the device). If no USB devices shows up in the list it's possible that it's not being automatically detected by the system, you might need to load some extra modules.
One important note: connect the usb cable before running audacity or it won't show in the list.
Using the USB device as default for all other apps will depend a lot on how your system is set up, but will worry with that later... first try to see if the usb device shows up in audacity.

I assume that you have a fairly standard Ubuntu Studio installation.
If you have Jack running, you will need to configure Jack to use the USB device (using "Jack Control").
If you are not running Jack, then you may be able to set Audacity to use the USB device as described by bgravato, or if that does not work, set the playback device back to "default" and set the playback device using "PulseAudio Volume Control" (it should be listed in "Main Menu > Sound and Video".)
