Another newbie question - how do I install the package?

Apologies for what is doubtless a naive question, but I am new to OSX. The few applications I have installed also came as .dmg files, and when run, instructed me to copy a folder to the main Applications folder. Audacity 1.3.6 doesn't do that - it just presents the program in the virtual disk. It runs OK from there, but this seems an unusual way of working - should I just manually create a folder in the main Applications folder, and copy everything across from the virtual disk?

Pretty much. The dmg file is a Disk Image. If you have two Macs, you can make a dmg file of one whole Mac and use that as a backup.
Anyway, the dmg file explodes into a "drive" with all the files necessary to run Audacity. I personally create a fresh Audacity folder, drag everything over from the mounted drive and drag that folder to /Applications. Again, I personally have a top level Mac folder called Keys-Installers-Settings and I put the original dmg file in there against failures and reinstalls.
If you decide you need MP3, download the right 'lame', explode it and drag the library file into /Applications/Audacity/PlugIns.
You can, if you wish, drag audacity.app down to the tool dock as a shortcut.
Finder > Preferences > Advanced > Show All File Extensions. This is handy when somebody sends you a WAV file and you can't find it. Or you're looking for the .app file, you won't find it without the extensions exposed.
