I am quite new to sound and need to cut out and rejoin lots of fragments from a 30 minute sound file of interviews. I have been through the file which is of an interviewer with four interviewees and listed timings for each speaker. I want keep just clips from the two main speakers.
There are about 25 clips I want to keep and though they are all in order within each speaker the two speakers are mixed up.
Can anyone suggest a suitable strategy?

Mark the sections that you wish to remove using "region labels" http://manual.audacityteam.org/man/Label_Tracks
When you have marked all of the regions to be deleted:
Click in the label text of the first label
Press ENTER to un-select the label text
Press the "Delete" key or "COMMAND + K" to delete the label and the audio section.
Press the Tab key to move to the next label position
..
Tab > DEL > Tab > DEL ....
When you have marked all of the regions to be deleted:

I assume I then end up with one file of all the bits I need to separated out into the two voices.
Would it then be best to make a dup of it and on the original delete one voice and on the copy delete to the other?

If you want to separate out the voices, after each delete press COMMAND + i
This will make a "split" at each delete point.
Tab > COMMAND+K > COMMAND+I > Tab > COMMAND+K > COMMAND+I > ....
If you then create an empty new track (must be mono/stereo the same as the original track) you can use the "Time Shift" tool (F5 key or the double headed arrow button <-->) to drag clips from one track to the other.
Note that an audio clip cannot be dragged to a new track if the entire audio clip is selected.
This will make a "split" at each delete point.
