I can't seem to find the solution anywhere and here is my issue:
When I hit record and play my USB Turntable, the only thing recorded in Audacity is what I can hear by sitting next to the turntable (that is, I heat a very faint semblance of what could be on the record). My input device is set to the USB Audio CODEC so I know it's not the microphone picking up the noise. Also, I have the gain turned all the way up so it shouldn't be a faint sound at all. Why is this happening?

The gain control shouldn't have anything to do with the USB turntable volume, unless the turntable itself has a volume control.
Apple > System Preferences > Hardware > Sound > Input. Is the turntable (USB-Something or Other) visible there and is it selected? Does the blue ball sound meter jump to the music when you play a record?

Same issue here. Unboxed a new Audio Technica LP120 turntable last night, downloaded the latest Audacity (beta) software, plugged the turntable into my iMac, running OSX 10.7, muddled through the Audacity and Mac settings as best I could, (you would think AT would have their manual updated to show a Lion screen, but I digress), and nothing. I can hear very faint music emanating from the turntable itself, but nothing is coming from the iMac. Koz, I do have the settings you mention correct, (the USB-Something or Other is USB Codec), but I'm kinda lost as to what else to do.

This is my issue so it doesn't really help me at all.

"You may need to use Audio Midi Setup to configure the USB device before the Mac will recognize it. See the section below on using Audio Midi Setup."
Have you done that?
