Channels not being transfered
I have 7 tracks layered in a project, all set to mono, but when I try to export them as an mp3, only the first two tracks are transferred, and one is right, one is left! Why is this?
Any help is greatly appreciated!!

I can't reproduce this problem using Audacity 1.2.6 on a PPC Mac running 10.5.8.
What Mac are you using, what version of OS X, and what version of Audacity?
Are you sure you didn't select "Export Selection" instead of "Export"?
Have you changed the settings of the "Pan" sliders on the tracks?

I'm on a Mac OS X, version 10.4.11

Audacity is the 1.3.11 version.
The pan levels are all even.
I've just been using "export", and I've experimented with every other option..

Desperation time ... reset the preferences.
Go to <your home>/Library/Application Support/audacity/
Open the file "audacity.cfg" in TextEdit.
Delete everything except the line "NewPrefsInitialized=1". Save changes without changing the file extension.
Open your Audacity project and try exporting again. You may have to locate the LAME library again.

I did all of that, and still nothing!
When the original project is up with all of it's layers, it plays just fine, and the left/right equalizers are, well, equal. But if it's converted into a, say, aiff file, the right is wayyy higher.
Even so, I can't figure out why the other tracks just won't play..

Is the issue with just this one project or does this happen with all multi-track projects?
If it is the latter I think that you may need to give us step by step instructions that tell us how to reproduce the problem.

I just noticed something,
In an older version of Audacity, I was able to have 16 channels, with the mono and stereo. With this, I can only choose Mono or Stereo. Could this have anything to do with it?

I don't understand the difference. Where can you choose Mono or Stereo? In the track panels?
Could you post a screenshot of your project - that might help. Reduce the window to a "reasonable" size, choose View > Fit In Window then View > Fit Vertically. From the help menu choose Screenshot Tools. Click the "Capture Window Only" button. A .png file will be created in your home folder. Attach that to a message here using the "Upload Attachment" button below the message composition window.
