Try the following:
Highlight a mp3 file in the Finder, right click (or control-click) on it, choose "Get Info"; in the window that is opened, change pop-up menu "Open With" to iTunes, and press the "Change All ..." button.
I personally have all sound files set to open in Quicktime player because iTunes imports everything in its library.

<<<iTunes imports everything in its library.>>>
Which you can also change. I think the default is to not import.

Yes, that's true: you can set iTunes to not make a copy of every song, but everything is imported into the Library database nevertheless.
