You're probably expecting little boxes or entry forms where you put times and dB values in, but I think the closest we can get to that is the envelope tools. Two white arrows and bent blue line in the tool window. Click on that and it will present a rubber band over your show. You can push the graphic around and do second by second changes in volume of the show.
If you're in the percent display, zero to 1, then the tools will have limited usefulness, but if you switch the display to the dB mode (black down arrow on the left), then you can reduce the volume of the show to -60dB, essentially nothing.

Try this plug-in (see attachment).
Download the zip file and extract into your Audacity plug-ins folder.
When you restart Audacity it will be listed in the Effects menu.
If you are using a version of Audacity with "Effects Categories" enabled, it will appear in the Mixer effects section.

The file that you want to open is ESP_fade_by_dB.ny.zip (the archive file that you downloaded), inside of which is the ESP_fade_by_dB.ny file.
I thought that you could open zip files on a Mac by double clicking, but I don't use Macs so if that's not right then hopefully Koz can say how to extract zip files on Macs.
Once you have the ESP_fade_by_dB.ny file you do not need to open or run it, just copy or move it into the Audacity plug-ins directory (again I hope that Koz can give details of how to do this).
By the way Koz, you may like to try this plug-in yourself - I think it is a nice, simple effect that could be useful for a lot of people, but I would appreciate some feedback on it.

Fade by dB seems to work exactly correctly.
Intel Duo Core Mac Mini.
OS-X 10.5.7 Leopard
Audacity 1.3.8 Current Beta
However... If you have an earlier Mac, you will not be able to UnZip anything. Select the file and Open With BOM Archive Helper or BOM Helper or something like that. I don't remember if it's in /Applications or /Utilities, but that's what you need to open the ZIP file. Earlier Macs used Stuffit and Stuffit couldn't speak ZIP. That's Bill Of Materials, by the way.
I change my Mac FireFox Preferences to download stuff to the Desktop instead of the /Download folder. I used to download stuff and then forget it was there.
Unzipping the downloaded file will give you ESP_fade_by_dB.ny as advertised. Drag this file to the plugins folder associated with your Audacity application. Restart Audacity.
I personally install Audacity by creating an Audacity folder and then drag all the Audacity program files and folders over to it. Then drag that folder into /Applications. Macs seem to be much happier with that than garden-hosing files and folders all over your machine.
