And be aware tha Audacity OOTB defaults to mono - go to Edit > Preference > Audio I/O and set the Recording Channels at the top right of the dialog box to 2 (stereo)

Re: playback
Possibly a hardware fault on the deck or it's on-board soundcard or USB services. Are there any leads you can swap to test this out? From looking at your deck on t'interweb there appear to be RCA outputs supplied with this - if you plug these to a hi-fi or mini system do you still get mono - or do you get stereo?

Re: playback
So this points to a fault on the ADC (soundcard) in the TT or the USB services. Just try wiggling the SB connector, or try a different USB port.
Since you are getting stereo out of the RCA outputs, you could try connecting these to the line in on your PC (you will neeed an RCA to 3.5mm stereo min-jack lead). Do not use the Mic in as it will probably overload it. You will also need to switch your deck to Line Level output (not phono) - this will use the pre-amp embedded in the TT and if you still don't get stereo this will point to the pre-amp being at fault.

Re: playback
Have spoken to Acer and they have said that I need to speak to Audacity about downloading other softwear that will enable me to play back in stereo.
