Fumble Fingers must have pressed crtl instead of shift and put Audacity into some unfamiliar mode:
Does anyone recognize this state? How can I get out of it? Bonus question: What exactly did I press to get into it?

All you've done is to right-click in the vertical scaling bar to the ommediate left of the wav-forms in the track. To rectify just left-click in the same place.
It's supposed to do that - it's just changing the scaling for you.
Fooled me too the first time it happened to me
