Do you mean a real telephone (land-line) or something else?
What hardware do you intend to use?

I thought of using a land line phone. I was thinking of just putting the phone jack from the phone into the computer input and was hoping somehow the audacity would record the conversation.

What does your telephone manual say about the phone jack? Most telephones do not provide an audio output connection.
There are "bug pickups" for telephones, but I would not expect the sound quality to be great even if they do work.
Possibly a better option would be to record the sessions using a Skype recorder such as "Pamela" and do the sessions over Skype. (for various technical reasons Audacity is not good for recording Skype). The recording can then be edited in Audacity.
Another option would be to use a microphone close to the telephone receiver to record your part of the conversation, and for the other party(s) to do the same. If they then send you their recordings either on a disk, or over the internet, you can then use Audacity to edit them together.
