Is it possible to record my voice through my home phone and convert to mp3 or wav file? Please advise, I need to do this for a job (voice test) interview and can't find software to do it with.

The software is not the problem - Audacity can record any audio that you send to it. The problem is getting sound from the telephone into the computer.
The way that this is done professionally is to use very expensive PBX call logging systems (thousands of dollars).
Much cheaper options are to use a telephone "pick up" such as the Olympus TP-7 Telephone Pick-up which are obviously not as good, but are available for just a few dollars.
