I am working on some audio & need to export it with the same peak amplitude as the original.

Is there a way to determine the amplitude of the highest peak in dB on a stereo track, in order to use that value in the normalize function after other audio processing?

Select the track then "Effect Menu > Amplify" but do not apply the effect. The Amplify effect will show how much amplification is required to bring it up to 0 dB, so, for example, if it says "Amplification (dB): 1.9" then you know the peak amplitude is -1.9 dB.
