Current tracks recording over a new track

I've been trying to resolve this all night to no avail so I'd really appreciate it if someone could help me.

When I try and record from my keyboard (through a cable, in stereo), it doesn't just pick up my keyboard sound - it also picks up all the other tracks that are already in the song and records them again as well, over my keyboard. So of course the quality is terrible!

Is there a way I can just get it to record my keyboard, and not the tracks that have already been recorded, on top of it all?

It worked fine for the first few minutes, then all of a sudden, I started to have these problems.

I tried unchecking the 'Play other tracks while recording new one' box - but mutes all the other tracks completely - and I still need to at least hear them to be able to record.

You should leave "play tracks" selected and fix the problems in Windows Control Panel. You are set to record from Stereo Mix or Mix-Out and not the audio connection to your instruments.

Stereo Mix is the setting you need to use to record YouTube Videos and Internet Music. It is the exact wrong setting to use recording your own music.

Restart Audacity when you get done making changes to make sure the changes stick.

Check your sound card settings. It's probably set to record from "Stereo Mix". You need to set it to record from the input that you're actually using (probably "Line in").
