Is there a method for removing/subtracting a specific frequency from a recording?

You may use a notch filter, should be available in the Effects menu.

You may also use the Equalizer (Equalization from the effects menu also).
Include as much details as you can in your post (Audacity version, Operating System, Equipment used, etc).
Please post your question in the appropriate forum (regarding audacity version and operating system).

Note that Audacity 1.3.13 includes a Nyquist Notch Filter underneath the divider in the Effect menu.
