Recording while listening to previous tracks (not working)

Hey guys, i'm not amazing with Audacity... and i've run into a bit of a problem...
My band in trying to record some demo's, so when we actually are in the studio, it's easier for the engineer to hear and do whatever.
Problem... say we track guitar, then we try and track drums while listening to the guitar track, it records the guitar track, onto the track with the drums. We want separate tracks.
The system is set up through two mixers, one controls the monitors, and the other the actual recording, playback, mixing, eq'ing... all that. So forget about the one for the monitors. The instrument come in through the mixer, and are recorded onto Audacity. I have looked up everything, tried everything... gone through all the audio settings... everything. Overdub is ON.
So if anyone can enlighten the problem, it would be much appreciated.

How does the mixer connect to the computer? USB or Line-In?
I would guess either you are sending the "control room" output of the mixer to Audacity instead of the "main out" or "tape out" (maybe you also want to set the monitor controls on the mixer to listen to PFL (pre-fader level) and mute the playback channel).
Or you are connecting the mixer to computer line-in and recording from stereo mix instead of line-in. And you are using headphones to monitor, of course?

It's connected through Line-In. The one controlling the playback, recording, mixing... is all line in (green I think?). The one for the monitors is in the blue. Those could be switched.
I think a lot of this problem stems from the fact that it's all through a sound-system. We need to hear our tracks, to record. Like our guitarist can play it, but in order for me to track drums... I need to hear him. The computer is way to far away to your headphones.
What i'm trying to do, is be able to listen to the previously recorded track through the computer playback, but not have it record again.

Also, I did try recording from a Line-In instead of Stereo mix.

You definitely need to do that.

You will need to either get some sort of extension lead, or move the computer. Headphones should be used to avoid "spill-over" from the speakers into the microphones.

The blue is line-in. Don't you want to send the recording (minus the playback) to line-in?

As well as setting Audacity to record from line-in and using headphones, are those headphones plugged into the mixer? That should let you hardware monitor, then you can turn Transport > Software Playthrough in Audacity off.

Hey guys, Overdub is on, Software Playthrough is off. All we did was plug headphones into the computer, and turn in to record from Line In instead of Stereo Mix. We also had headphones plugged in to the mixer, but that didn't matter.
Thanks a lot guys, almost got a whole song tracked last night.
